Cripsy Bhindi Fries(Lady Finger Fries)





Ingredients: 

1 cup bengal gram flour
15 chopped lady finger
1 tb spoon salt
1 tb spoon chilli powder
1/4 cup water
Oil to fry

Recipe:

Chop the lady finger as shown.



Mix all the ingredients well with water.(Make sure batter is not too thin)
Make sure there is no lumps formed.



Keep oil in a frying vessel and heat it.
Deep fry in oil.


 Crispy bhindi fry is ready to serve.



Variations:

In a pan add 1 table spoon oil. 
Add 1 tea spoon of ginger garlic paste.
Once oil is hot enough add 1/2 chopped onion.
When onion turn light brown,then add little chilli sauce and tomato sauce. 
Now add the fried bhindi to this.
This can be well served with chapati or as a side dish with fried rice.

Pav Bhaji



Ingredients :

2 Chopped tomato
1 Chopped onion
1 potato
1/2 cup cauliflower
1/2 cup chopped beans
1/2 cup chopped carrot
1/2 cup chopped capsicum 
1/2 cup green peas 
2 Table spoon red chilli powder
1 Table spoon oil
1/2 cup butter
1 Table spoon garlic paste
1 Table spoon pav bhaji masala
1 Lemon
2 Table spoon oil
Coriander leaf(to garnish)
Salt to taste 
Bread

Recipe :

Keep water in a bowl to boil.
To this add potato,cauliflower,chopped beans,carrot,capsicum and green peas.
Cook them for about 15mins(or till the time they get completely 
cooked properly).



Once they are cooked drain the extra water and keep it aside.
Take a cooking pan. Add 2 table spoon oil.
Once the oil is hot, add garlic paste and the chopped onion.
After 5 mins, add the chopped tomato, red chilli powder and 1 table spoon pav bhaji masala and salt to taste. 


After 5 mins add all the cooked vegetables that were set aside.
Cook for about 15 mins over medium heat.
Now heat a non-stick over medium heat. 
Add little butter and roast the bread till light brown as shown. 
Cut the lime to small piece and chop onion finely. 
Pav Bhaji is ready to serve.

Vegetable Cutlet



Ingredients :

1 Chopped carrot
7-8 Chopped beans
1 Sweet corn (separate the corn) or green peas
2 large cooked and smashed potatoes
1 chopped onions
5-6 Curry leaves
1 Tea spoon cumin seeds
1 Tea spoon mustard seeds
1 table spoon chat masala(optional)
1 table spoon red chili powder
2 table spoon of all purpose flour
Bread crumbs 
Oil to fry
Salt to taste 

Recipe :

Keep water and all chopped vegetables in a bowl to boil. 
Add salt to taste. (Optional. You can add it later at the end). If you add salt earlier then the vegetables will cook faster. 


Once the vegetables are cooked then drain the water completely and keep the cooked vegetables aside.
Take a pan/vessel and put 3 tb spoon oil.
Once the oil is hot enough add mustard seeds.
After the mustard seeds starts spluttering add cumin seeds.
Now add curry leaves.
Now add chopped onion.
When the onion's turn brown add the cooked vegetables.
Add chili powder, salt and chat masala now.
Cook for a minute. 
Mix this with the smashed potatoes. Make an oval or round shape out of it.
In a pan keep oil to fry. 
In a small bowl add all purpose flour and water.Mix both of it well. 



Now dip the round shaped vegetable mixture into all purpose flour mixture and then cover it with bread crumbs and deep fry.
Vegetable Cutlet is  ready to serve. It is well served with tomato sauce.

Potatoe Chips






Ingredients: 

2 Large potatoes
Oil to fry
Salt to taste
Chilli powder(Optional)

Recipe: 

Slice the potatoes to the thickness you want. 
Heat the oil in a pan to fry the chips.Preferably on medium heat.  


Remove the chips from the oil once it is fried.  
Spray salt and chilli over the chips. Make sure you spray it while the chips are hot.

Mirchi Bajji / Chilli Bajji





Ingredients: 

1 cup bengal gram flour
1 cup rice flour
4 large Mirchi/Chilli's
1 tb spoon salt
1 tb spoon chilli powder
1/2 tb spoon carom seeds
1/4 spoon eating soda (this is optional)
1 and 1/2 cup water

Recipe:

Chop the mirchi from the centre into two pieces.
Mix all the ingredients well with water.(Make sure batter is not too thin)
Make sure there is no lumps formed.
Keep oil in a frying vessel and heat it.
Dip the Mirchi/Chilli in batter and deep fry it in oil.

Customize:

You can prepare same with onion's.
You can prepare same with ridge gourd.





Onion Bajji




Ingredients: 

1 cup bengal gram flour
1 cup rice flour
1 chopped onion
1 tb spoon salt
1 tb spoon chilli powder
1/2 tb spoon carom seeds
1/4 spoon eating soda (this is optional)
1 and 1/2 cup water

Recipe:

Mix all the ingredients well with water including chopped onion.(Make sure batter is not too thin)
Make sure there is no lumps formed.
Keep oil in a frying vessel and heat it.

Customize:

You can prepare same with mirchi/chilli.
You can prepare same with ridge gourd.

Nipattu




Ingredients: 

1 and 1/2 cup Rice Atta
1/2 cup Maida/All purpose flour
1/4 cup Gram flour
2-3 strings Curry leaves
2 Tablespoons Peanuts(Grind it to medium size)  
2 Tablespoons Bengal gram Dal
2 Teaspoons Chilli powder
2 Teaspoons(white) Sesame seeds
1 Teaspoon Cumin seeds
Salt to taste
Oil to fry 


Recipe



Mix all the ingredients with water. 
Make the dough little soft enough like the roti atta.

(I have added little red chilli extra since I am use to spicy food.
You can add little less chilli if you want.)
Make small balls out of this and flatten it using your hand or chapathi roller. 
(Tip: If you are using chapathi roller make sure you put a plastic sheet below and top of the dough,grease it with oil and then roll it. By doing this the dough will not get sticked.)



Heat oil in a pan to fries this. 
Fry on medium heat till it is golden brown.
(Tip: Make sure you don't over fry. If you over fry then you can sense the burnt taste.)
