Ridge Gourd Sabji






Ingredients:

2 Chopped ridge gourd
1 chopped onion
4-5 chopped green chilli
1 tsp cumin seeds
1 tsp mustard seeds
1/2 tsp turmeric powder
3-4 curry leaves
1 cup powdered dalia(putani)
2-3 tb spoon oil
1 cup water
Salt to taste





Recipe

Take a pan/vessel and put 1-3 tb spoon oil.
Once the oil is hot enough add mustard seeds.
After the mustard seeds starts spluttering add cumin seeds and curry leaves.
Now added chopped onion and chopped chilli.
Now add chopped ridge gourd and 1 cup water.
Now add salt.
Once the ridge gourd is cooked add turmeric powder and powdered dalia(putani).
Stir the contents properly and cook for 7-8mins.
Ridge gourd sabji is ready to serve. 
It is well served with chapati and rice.

Sabbakki Kichadi (Sabudane ki Khichdi)




Ingredients: 

2 Cups soaked sabu(drain all the water properly)
1 Cup roasted groundnut powder
1/2 Chopped onions
3-4 Chopped green chillies 
1 Teaspoon Cumin seeds
5-6 Curry leaves
4-5 Table Spoon oil
1/2 Tea Spoon turmeric powder
Salt to taste






Recipe


Add oil in a pan and allow it to heat. 
Once the oil is hot enough then add cumin seeds.
Add chopped onions, green chillies and curry leaves. 
Mix all of them properly.
Now add the salt and turmeric powder.
Now add the roasted groundnut powder. 
Add the soaked sabu and mix all the ingredients well.
Keep stirring 2-3 mins once. 
After 10mins take little sabu and see if it is cooked well.
Now switch off the gas.
Sabudane khichdi is ready to serve.

Sweet Corn Vegetable Soup





Ingredients :

1 Chopped carrot
7-8 Chopped beans
1 Sweet corn (separate the corn)
2tb Spoon corn starch 
2 Cups water
Salt to taste 

Recipe :

Keep water and all chopped vegetables in a bowl to boil. 
Add salt to taste. (Optional. You can add it later at the end). If you add salt earlier then the vegetables will cook faster. 



Once the vegetables are cooked. In a small bowl take the corn starch and add little water. Mix it properly to make sure no lumps are formed.

Stir the vegetables in one hand and add the corn starch in another hand. Keep mixing for 5 mins. 
The soup is ready to serve. You can add black pepper powder. 
It is well served with gobi manchurian.






Vegetable Upma





Ingredients: 

2 Cups upma rava
4 Cups water
1/2 Chopped onions
3-4 Chopped green chillies 

2 Tablespoons Urad Dal
2 Tablespoons Bengal gram Dal
1 Teaspoon Cumin seeds

1 Teaspoon Mustard seeds
5-6 Curry leaves
1 Chopped Tomato
1 Chopped Carrot
8-9 Chopped Beans
1 cup Green peas
4-5 Table Spoon oil
Salt to taste
Oil to fry 





Recipe


Add oil in a pan and allow it to heat. 
Once the oil is hot enough then add mustard seeds, cumin seeds, urad dal, bengal gram dal.
Add chopped onions, green chillies and curry leaves. 
Add chopped carrot and beans. 
Add green peas. 
Mix all of them properly.
Now add the water and salt.
Wait till all the vegetables are cooked properly.
Add chopped tomato now. 
Now stirring water in one hand put the upma rava. 
After 10 mins switch off the gas. 




 Upma is ready to eat. It is well served with mixture or pickle.









Besan Lado





Ingredients: 

2 cup besan (bengal gram flour)
1 cup ghee 
2 cup sugar powder(depending on how much sweet you want you can add more sugar)
Dry grapes and Cashew

Recipe:

Take a non-stick pan.Put the ghee and besan together in the pan.
Mix and fry both of them. Keep stirring continuously.
Keep stirring till you get the aroma of besan. 



Now fry cashew and dry grapes in 2tb spoon ghee and put in the above mixture. 
Allow it to cool down for 5 mins. 
Now add sugar powder and mix well. 
Grease your hand with ghee and take small portion of mixture to form small balls. 
Besan ladoo will be soft while it is made and becomes hard after some time. So don't worry if it is too soft. 






Davangere Benne Dosa ( Crispy Butter Dosa)




You can prepare crispy dosa at home exaclty like the one you get in the restaurants. 


Ingredients:

1 cup dosa/idli rice.
1 cup white lentils/urad dal.
1/2 cup cooked rice.
1/2 cup all purpose flour.(i.e maida).
1/2 cup sooji rava.(to make dosa crispy)
1/2 tb spoon eating soda.(optional)
1 cup butter.

Recipe:

Soak 1 cup dosa/idli rice and 1 cup white lentils/urad dal overnight or for about 8-9 hrs.
Cook 1/2 cup rice and grind it in a mixer by adding little water.
Grind the soaked 1 cup dosa/idli rice in a mixer by adding little water.
Grind the soaked 1 cup lentils/urid dal in a mixer by adding little water.
Mix all three grinds properly.
Now in a bowl add 1/2 cup maida, 1/2 cup sooji rava, 1/2 tb spoon eating soda.
Add little water and mix all three well so that no lumps get formed.
Pour this to the grind prepared earlier.
Now mix all of them properly so that no lumps get formed.
Keep the batter in a warm place overnight or about 9-10 hrs.
(If you have an oven then pre-heat it for 300 degrees and off it.
keep the batter in oven).
After the batter rest for 9-10 hrs, now it is ready for preparing dosa.
Add 2tb spoon of butter/ghee on to dosa.

Variations: 

You can give different flavours to dosa by adding:
Chopped onion's and green chilli.
Chopped tomatoe's and green chilli.






Eggless Cake




Ingredients:

2 and 1/2 cups All Purpose Flour
2    tb spoon Baking Powder
1    tb spoon Baking Soda
1/4  tb spoon Salt
3    tb spoons Sugar
2    tb spoons Vanilla Extract
1    can Condensed Milk
1    cup Water
1/2  cup Melted Butter
2    tablespoons Vinegar

Recipe:

Mix all the ingredients properly.
Stir it properly and make sure there is no lumps formed.
Grease the pan which is big enough to bake the cake with flour.
Pour the mixed cake batter to pan.
Pre-heat the oven to 350 degree.
Keep the pan in oven for about 15-20 mins.
Use a tooth pick or a knife to see if the cake is properly baked.
Insert the tooth pick inside the cake and make sure that tooth pick comes out smoothly without anything getting stick to it.
If tooth pick comes out smoothly then it means your cake is done.

Variations:

You can add chocolate chips.
You can add dry fruits.
You can use fresh fruits for topping it.


Butter Biscuits / Benne Biscuits



Ingredients : 

1 cup maida
1 and 1/2 cup powdered sugar
1 cup daldha
1 tb spoon baking powder
1 tb spoon baking soda

Recipe:

Mix maida and powdered sugar well.
Add baking powder and soda.
Add daldha and beat it until it forms soft dough.
Make small balls from the dough.
Pre-heat the oven for 350 degree.
Grease an oven plate with little maida so that the biscuits doesn't get sticked.
Place all the ball into the plate.
Once the oven is pre-heated keep the plate in the oven.
Leave it for over 15 mins.
After 15 mins remove them and keep it in room temperature for about 10mins.
After 10 mins it will be soft enough for you to eat.

Customize : 

You can add chocolate chips to the dough.
You can add cashew/almond or any dry fruits.
